Lemon Couscous

Ingredients:

2 cups couscous
2 cups boiling water
2 teaspoons grated lemon rind
2 teaspoons lemon juice
2 tablespoons parsley, coarsely chopped

Method:

1. In a heatproof bowl, pour water over couscous, cover and allow to stand for 5 minutes or until the water is absorbed.  Fluff with a fork.
2. Stir in rind, juice and parsley.
3. Serve as a side dish.
