Ingredients:
1 cos lettuce torn into large pieces
2 lebanese cucumbers, roughly chopped
12 kalamatta olives
4 roma tomatoes, quartered
½ red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon lemon juice
200g low fat fetta cheese
Method:
- Put lettuce, cucumber, olives, tomato and onion into a mixing bowl. Add oil and lemon juice and toss gently.
- Season to taste.
- Crumble fetta over top and serve.
